Raspberry Ginger Chicken Stir-Fry
Beautifully tasty stir-fry with sweet raspberry, sour ginger, and tender chicken. Bright bell peppers and crunchy snow peas add to the flavor.
Ingredients:
- 1 lb chicken breast, thinly sliced
- 2 tablespoons soy sauce
- 2 tablespoons raspberry jam
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup snow peas
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Cooked rice for serving
Instructions:
In a small bowl, mix together soy sauce and raspberry jam
Heat vegetable oil in a large skillet over medium-high heat
Add chicken slices and cook until browned, about 5 minutes
Remove chicken from skillet and set aside
In the same skillet, add ginger and garlic, cook for 1 minute
Add bell peppers and snow peas, cook until slightly tender, about 3-4 minutes
Return chicken to the skillet, pour the soy sauce-raspberry mixture over the chicken and vegetables
Stir-fry for another 2-3 minutes until everything is heated through and well coated
Season with salt and pepper to taste
Serve hot over cooked rice
