Green Vegan Enchiladas



There are healthy things like quinoa, black beans, and vegetables in these Green Vegan Enchiladas. They are wrapped in a tasty green enchilada sauce. They're simple to make and make a great plant-based meal.

Ingredients:

  • 1 cup cooked quinoa
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup chopped spinach
  • 1 cup diced bell peppers
  • 1 can 4 oz diced green chilies
  • 1 cup green enchilada sauce
  • 8 small corn tortillas
  • 1 cup vegan cheese, shredded
  • 1 avocado, sliced for garnish
  • Fresh cilantro, for garnish
